This course introduces students to the basic structure of the US legal system and provides an opportunity for students to improve critical thinking by examining g the fields of law specifically relevant to the management of hospitality and tourism business. Topics of particular interest to the industry include: contracts, torts, product liability, liquor liability, guest privacy rights, and related ethical considerations.

Examines the history and development of gaming, casino operations including slots, table games, sports and Internet betting, credit and casino accounting, casino hotels and casino foodservice, and the marketing of the core gaming products. A central focus will be on current trends as well as the primary management and financial elements unique to operating a casino.

Work experience in the hospitality and tourism industry. Students must complete 400 hours of work experience in the HTM industry with completed and signed Work Experience Form.

A class designed for students to earn academic credit by integrating hospitality job experience as an intern with the concepts and theories learned in the classroom. To qualify the internship must offer rotation through departments or completion of or collaboration in a special project.

A special problem or independent study in the hospitality field not available in regular course offerings. Conducted under the supervision of a sponsoring faculty member.

Human resource management in food service, hotels, and the travel industry. Functions of leadership motivation, job design, recruitment, wage and salary administration, performance appraisal. Training in health and safety.

This course is designed to engage students in the exploration, comprehensions, and appreciation of foodservice management. The course aims to familiarize students with the foodservice industry and classifications of foodservice operations. It also focuses on foodservice functions including menu design, purchasing, production, service, safety and sanitation, and facilities. It discusses management functions including leadership, beverage management, service, human resources, and cost control. The course seeks for students to develop critical thinking skills, higher management perspectives, and gives them the opportunity to be creative in developing a business plan for a proposed foodservice operation and being cognizant of the myriad of challenges and opportunities associated with foodservice management through analysis of current trends.

This course examines practices and systems utilized in managing and operating today's modern lodging establishments. Topics covered include: front office operations, guest service and accounting, revenue management, security and safety, and housekeeping as well as issues related to coordination with other departments such as food and beverage or sales.
