On today's menu:

Wild Rice or Ginger Carrot Soup
Olive Bread
Garden Salad with Thousand Island Dressing (with dinner)
Pan-Seared Salmon with Pineapple Salsa served with Sauteed Spinach and Basmati Rice Pilaf
Chocolate Mousse

Lunch and Dinner include a choice of two soups. Dinner includes a salad course.
