Topic: Food Safety in a Global Supply Chain

 

Abstract: Recent crises in the food industry have focused industry, government, and consumer attention to the need for food safety. These crises primarily involve both contamination, where bacteria, mold, or other harmful organisms enter the food manufacturing and distribution processes, and adulteration, where man-made or natural additives are introduced to an otherwise healthy food product. This seminar focuses on food safety from the perspective of supply chain risk management. Efficient and effective management across a global network requires systematic process monitoring, technology enabled data collection, new and unique forms of trading partner collaboration, and the application of advanced analytics to move from reactive to proactive food safety assurance.
